Cost Controller

Responsibilities

• Food and beverage cost control

• Calculate food and beverage costs against sales.

• Monitor recipe costs, portion sizes, waste, and spoilage.

• Compare actual food costs with standard costs.

• Investigate excessive consumption and unexplained variances.

• Inventory and stock control

• Verify stock receipts against purchase orders and invoices.

• Monitor issues to the kitchen, bar, spa, and other departments.

• Conduct physical stock counts and reconcile differences.

• Monitor expiry dates, wastage, theft risks, and slow-moving inventory.

• Purchasing and receiving controls

• Check purchase prices against approved quotations and supplier agreements.

• Verify quantities and quality received.

• Identify unusual price increases and unauthorized purchases.

• Work with Purchasing and Receiving without taking over their responsibilities.

• Cost reporting and analysis

• Prepare daily or weekly cost reports.

• Calculate food cost percentage and gross profit margins.

• Analyze actual versus budget and standard costs.

• Recommend corrective actions to management.

Job Requirements

Minimum Qualification

• Bachelor’s Degree in Accounting, Finance, Business Administration

Work Experience

• 4+ years of experience as a cost controller in hotel and similar industry

Essential Skills

• Deep understanding of cost accounting concepts (standard costing, variance analysis, earned value management, inventory valuation).

• Problem-Solving & Commercial Acumen: Ability to recommend actionable solutions to minimize financial waste.

• Assertiveness & Diplomacy: Confident in challenging unauthorized spending and enforcing budget rules politely but firmly.

• Cross-Functional Communication: Able to translate financial findings into practical instructions for technical and operational teams.
